Vegan No Waste Banana Peel Muffins

No we’re not bananas, we’re eating our banana peels and showing you that banana peels not only add extra depth of flavour but colour too 🙌🏼

➡️  Ingredients: 

3 over-ripe bananas, peel and all
1tbs of vanilla extract
1tsp of cinnamon
1tsp of bi-carbonate soda
1tsp of baking powder
250g self raising flour
130g granulated sugar
250ml dairy free milk
100ml rapeseed / flavourless oil
8 pieces of dairy free dark chocolate 

➡️ Method: 

Preheat oven to 170 degrees (fan forced). Cut the top and tail off your over ripe bananas with a pair of scissors. Discard ends and put your bananas into a blender until mashed. Combine flour, cinnamon, baking powder and bi-carb. Add mashed banana, vanilla extract, oil and dairy free milk. Mix until combined. Pour into muffin cases and squish a piece of dark dairy free chocolate into the centre (when you bite into the centre of your muffin, the chocolate will leave a lovely gooey chocolatey marble effect). Bake for 25 mins or until just cooked through. Enjoy!

Notes: If you don’t fancy muffins, pour into a lined loaf tin. You can also use gluten free flour, gf baking powder or /and cow’s milk if you prefer.🐒
