Ginger Banana Bread Biscuits

Banana Bread Gingerbread biscuits


➡️ Ingredients: 

  • 60g Honey
  • 60g Golden Syrup
  • 100g Light Brown Sugar
  • 1tbs Ground Ginger
  • 3tsp Ground Cinnamon
  • 1/2tsp Ground Cloves
  • 1/2tsp Ground White Pepper 
  • 1tsp Ground Nutmeg
  • 120g Butter
  • 1tsp Bicarbonate of Soda
  • 350g Plain Flour, sifted
  • 1 Over-Ripe Mashed Banana

➡️ Method: 

1. Place honey, syrup, sugar, ginger, cinnamon, cloves, pepper and nutmeg in a large saucepan. Place the pan over medium heat and stir with a wooden spoon to dissolve the sugar, then bring the syrup up to the boil.

2. Reduce the heat to low and add the butter one cube at a time until melted. When you have added all the butter, turn up the heat to medium and bring to the boil. Remove the pan from the heat and add the bicarbonate of soda, whisking for as long as it takes for the mixture to double in size. Leave to cool for an hour.

3. Add the flour and mashed banana until throughly combined. Tip the dough out on table dusted with flour. The mixture will be wet but don’t worry as it will harden in the fridge. Wrap in cling film or beeswax cloth and refrigerate overnight or for 4 hours. 

4. Roll out the dough, cut your ginger people and bake in a preheated oven at 150 degrees Celsius for 20 mins. Let cool, decorate, share and enjoy! 💛🍌🍞🍪🌲🌟🐵
