BIG Banana Nut Bars
Quick and easy to make, these nut bars are a great healthy snack that hit the sweet spot.
150g mixed nuts
150g dried apricots
150g pitted prunes
25g unsweetened cocoa
50g smooth peanut butter
1 banana, over-ripe
1. Blend all ingredients in a food processor.
2. Line a square or rectangle baking tin with baking paper.
3. Tip your mixture into the tin and flatten.
4. Freeze until set (about 2 hours) and cut into bars.
Store in the freezer for up to a month and in the refrigerator for up to 2 weeks.
